What do SUGAR, SOAP, GELATIN, CONDENSED MILK and GLUE have in common?

A process developed by Norbert Rillieux became fundamental to producing all of them.

In the 1840s, Rillieux developed the multiple-effect evaporator, a system that made sugar refining safer, more efficient, and less expensive. In simple terms, he figured out how to reuse heat instead of wasting it. Steam from one stage could help heat the next stage, dramatically reducing the fuel needed.

His invention revolutionized sugar processingβ€”and the same basic evaporation process went on to become an important part of modern industrial production. Rillieux patented his invention in 1843, and the Smithsonian still preserves his original patent model.

One invention. Five everyday products. And a name most people have never heard.
