Yellow grits with dry mushrooms

#Mayimoulin ak #djondjon better known as #cornmeal/ #grits/ #polenta, is one of the staples in a haitian household, it's warm and comforting.. We cook it many ways, sometimes plain, sometimes with red or black beans.. This time around I cooked it with dried #mushrooms and #blackbeans, hence the dark color..

DRIED MUSHROOMS :
Fill a pot with water and add your dried mushrooms. Let it come to a boil, until you notice that the liquid has become dark.. Then turn off the flame, strain, put aside..

DRY BLACK BEANS:
Fill a pot with water, add in your dry beans, scallion, garlic and bring to a boil until the beans are soft.. Then set aside..

if you're pressed on time, black can beans will get the job done.

Use the same step as if you were making grits except instead of using fresh water, you'll be using the water from your dry beans and strained mushrooms, (this is where the dark color will come from) season to your liking.. Im haitian, so I will use my épis and other spices to flavor my water.. Add in your choice of grits, stir to prevent lumps..add some coconut milk.. Then cover and let cook for 30-45 minutes.. Et Voilà!
